On Tap At Gnome Brew
Hop Sampler: Pahto
Release in 2018, Pahto was bred for bittering. This hop packs 17 – 20% alpha acid and imparts a smooth and clean bitterness when used in the early boil.
The aroma profile of the hop cone is described as herbal, earthy, woody, and resinous with some fruit.
The name Pahto™ is inspired by the native name for Mount Adams, the second-highest mountain in Washington State, and the most prominent landmark seen from the Yakima Valley.
Local Porter
We re-brewed one of our favorites for the cooler weather--A brown porter brewed exclusively with local ingredients: malts from Indiana craft maltster Sugar Creek include Pale Ale, Crystal 40, Brown, Chocolate, and Rauchmalt; hops from Great Lakes Hops in Michigan; yeast from Omega Yeast in Chicago; and, of course, water from Lake Michigan.
Hop Harvest Ale
An amber ale whirlpool hopped with 20 ounces of wet Cascade hops freshly harvested by a generous customer in the neighborhood.
On Deck
Hop Sampler: Mt. Hood
This classic American variety has been with us since 1989 which is fairly ancient in the world of American hop breeding. It was bred from Hallertau Mittelfrüh to provide noble hop character from an American grown hop. Use it in lagers, wheat beers, Belgian styles or as an interesting substitution for any noble hop or in a old style American Pale Ale. Spicy and herbal.
Cosmic Juice Pop
A New England style IPA mash hopped with Saaz for thiol precursors then whirlpooled and double dry-hopped with a total of 6 ounces of the new Cryo hop blend, Cryo Pop. We pitched Omega's Cosmic Punch to turn all the thiol precurors into passion fruit and tropical fruit aroma.
Pumpkin Spiced Latte
A milk stout steeped with Intelligensia cofee and Spice House Pumpkin Spice Blend. No pumpkins were harmed in the making of this beer.
Lutra Oktoberfest
Our last Oktoberfest kicked so fast we had to brew another for the Chicago Waldorf School's Oktoberfest celebration. We fermented at 90˚ and kegged a week later, just in time to “lager” it for a week before serving.
