Weyermann Floor-Malted Bohemian Pilsner Malt is one of Weyermann's Heirloom malt offerings. Produced from the Bojos and Malz Bohemian barley varieties and handled in the traditional malting methods this malt offers more character and flavor than a typical pilsner malt. It will produce a pale golden wort with sweet honey and light biscuit flavor.
Traditional floor malting starts with the barley soaking in water for 48 hours, allowing germination which will produce the enzymes essential to converting starch into fermentable sugars used in the brewing process. After germination the barley is spread out on a floor and hand turned several times a day so that it dries evenly.
After drying the barley is kilned, which stops germination and gives the malt its distinct flavor and color characteristics. Bohemian Pilsner is lightly kilned which allows it to retain its straw color and subtle flavors of honey and bread dough.
Weyermann Floor-Malted Bohemian Pilsner is a perfect malt for brewing pale Czech and other continental styles without sacrificing depth of flavor.
