Weyermann Dark Wheat Malt has been kilned for slightly longer than Pale Wheat. Like Pale Wheat it can serve as both a base malt in a recipe or as a color and flavor adjustment. Its high protein content lends a fuller body to a beer, and wheat can aid in head retention. It will produce a golden-amber wort with full sweetness and notes of bread, nuts, toffee, and pastry. Consider using rice hulls or another filtration aid with larger additions.
