Briess Caramel 90 is a crystallized malt with a medium-heavy roast. In a wort it will add a strong caramel flavor with notes of burnt sugar, raisin, and prunes along with red coloration. In addition to color and flavor enhancement, Caramel 90 will improve mouthfeel and head retention.
