Briess Caramel 120 is a heavily roasted crystallized malt. It will contribute a strong caramel burnt sugar flavor with additional dried fruit notes of prune and raisin. It will also add a red color to wort, which will intensify at higher usage rates. In addition to color and flavor enhancement, Caramel 120 will improve mouthfeel and head retention.
